What Dairy Plus adds
Dairy Plus gives milk a fuller processing chain. Settled milk can be skimmed for cream, cream can be churned into butter, and milk can be curdled into curds and whey. A cheese kettle supports additional dairy processing, including halloumi, ricotta, feta, caramelized whey, and clarified butter.
Curds can be handled in different ways: whole-milk curds combine with brine for feta, while skim-milk curds can be stretched at a table into mozzarella. The mod also introduces fruit vinegar as a useful processing ingredient and lets feta remain fresh longer when stored in brine.
The food options extend beyond dairy. Soybeans can be processed into soymilk and tofu, while the new ingredients can be incorporated into meals. Sweet custard provides an additional dessert option.
